Thoughtful Thursday - Spaghetti & Meatballs

½ pound ground beef 
½ pound ground pork sausage 
1 egg, beaten 
1 cup parmesan cheese, grated 
¼ cup fresh parsley leaves, chopped 
1 teaspoon fresh garlic, crushed 
½ cup breadcrumbs 
½ teaspoon sea salt 
1 teaspoon pepper 
2 tablespoons olive oil 
½ cup onion, chopped 
3 cups tomato sauce 
1 pound spaghetti noodles, cooked 
1. In a large bowl combine meats, egg, parmesan, parsley, garlic, breadcrumbs, salt & pepper. 
Form mixture into 1½-inch balls. In a large skillet, heat oil over medium heat. Add 
meatballs to pan & cook in batches to prevent overcrowding. Brown meatballs for 15 
minutes, constantly turning to cook evenly. Remove meatballs & drain on a plate lined with 
paper towels. 

2. Remove all but 2 tablespoons of pan drippings. Add onions to the pan & sauté them for 10 
minutes. Add tomato sauce to the pan. Add meatballs to the sauce & simmer for 15 

3. In a large bowl, add hot pasta noodles then pour sauce & meatballs over the top. Sprinkle 
extra parmesan on top & serve. 

servings: 8 / prep time: 15 minutes / cook time: 45 minutes
