Quality Time Tuesday MEXICAN BEEF TOSTADA
6 tostada shells
1 pound ground beef or turkey
½ cup onion, finely chopped
1 tablespoon garlic, crushed
1 tablespoon taco seasoning
1 can refried beans
1 cup lettuce, shredded
1 cup Mexican blend shredded cheese
1 cup tomatoes, diced
½ cup sour cream - optional
1. Preheat oven to 350. Warm tostada shells for 5 minutes. In a medium skillet, add ground
meat, onion & garlic. Cook on medium-high heat for 5-7 minutes, until browned. Drain fat
from pan then add taco seasoning.
2. In a small saucepan, heat refried beans. Assemble tostadas by covering each with the refried
beans first, so that everything else has something to hold on to.
3. Add the seasoned meat mixture next. Sprinkle on shredded lettuce, cheese & tomatoes.
Finish each tostada with a spoonful of sour cream on top.
