1 cup red onion, chopped 
¼ cup scallions, chopped 
2 teaspoons fresh thyme leaves, chopped 
1 teaspoon sea salt 
2 teaspoons brown sugar 
½ teaspoon allspice 
½ teaspoon cinnamon 
½ teaspoon nutmeg 
1 scotch bonnet or habanero pepper, chopped 
1 teaspoon pepper 
2 tablespoons soy sauce 
1 tablespoon olive oil 
1 tablespoon vinegar 
½ cup BBQ sauce 
40 large shrimp, peeled & deveined 
10 wooden skewers 
1. Prepare grill to medium heat. In a food processor combine onion, scallions, thyme, salt, 
brown sugar, allspice, cinnamon, nutmeg, chili pepper, pepper, soy sauce, oil & vinegar. 
Process mixture until smooth, about 1 minute. In a large plastic re-sealable bag, combine 
shrimp & jerk marinade. Place bag in the refrigerator for 30 minutes. Soak the wooden 
skewers in water for 20 minutes. 

2. Remove the shrimp from the bag & discard the marinade. Skewer 4 shrimp onto each 
wooden skewer. 

3. Grill the shrimp over medium heat for 2-3 minutes on each side. Brush shrimp with BBQ 
sauce during the last minute of the cooking time.
