Fun Friday JAMAICA-ME-CRAZY JERK CHICKEN
8 chicken thighs, boneless/skinless
1 cup red onion, chopped
¼ cup scallions, chopped
2 tablespoons fresh thyme leaves, chopped
1 teaspoon sea salt
2 teaspoons brown sugar
½ teaspoon allspice
½ teaspoon cinnamon
½ teaspoon nutmeg
1 scotch bonnet or habanero pepper, chopped
1 teaspoon black pepper
2 tablespoons soy sauce
1 tablespoon olive oil
1 tablespoon vinegar
½ cup BBQ sauce
1. Place chicken in a large re-sealable plastic bag. In a food processor combine all ingredients
except BBQ sauce. Blend for 1 minute until smooth. Pour Jerk marinade into plastic bag &
thoroughly coat chicken. Refrigerate & marinate for 1 to 24 hours.
2. Grill chicken over medium heat for 18-20 minutes, turning halfway through cooking time.
Or, place chicken on a baking sheet & broil on the bottom rack for 20-25 minutes, turning
halfway through cooking time.
3. Brush chicken with BBQ sauce during the last 10 minutes of cooking.
