Waistline Wednesday - TOMATO, MOZZARELLA & BASIL

6 vine ripe tomatoes 
6 ounces buffalo mozzarella cheese (whole) 
½ cup extra virgin olive oil 
¼ cup balsamic vinegar 
12 fresh basil leaves, chopped 
sea salt & pepper, to taste 
 
1. Slice tomatoes ¼-inch thick & arrange them on a large platter. Slice the mozzarella cheese 
into ¼-inch thick slices & arrange each piece on top of each tomato. 

2. In a small bowl, whisk together oil & vinegar. Pour mixture over the tomatoes & 
mozzarella. Sprinkle basil on top & lightly season with salt & pepper.
