Thoughtful Thursday TURKEY MEATLOAF
2 pounds lean ground turkey
1⁄2 cup onion, diced (optional)
1⁄2 cup green bell pepper, diced (optional)
1 teaspoon fresh garlic, chopped
1 15-ounce can diced tomatoes, drained
2 tablespoons Worcestershire sauce
1 teaspoon seasoned salt
1 teaspoon pepper
2 eggs, beaten
1 cup BBQ sauce
1 can tomato soup
1⁄2 cup cheddar cheese, shredded
Preheat oven to 350 degrees. In a large bowl combine turkey, onion, bell pepper, garlic, tomatoes, Worcestershire, seasoned salt & pepper. Thoroughly blend with your hands.
Line a baking pan with foil & coat with non-stick spray. Form the mixture into a loaf shape & place it in the middle of a baking pan. Bake for 30 minutes.
In a small bowl, mix together BBQ sauce & tomato soup. Remove pan from the oven, drain drippings & pour sauce over the top of the meatloaf. Return meatloaf to the oven & bake for 20 more minutes. Sprinkle cheese on top during the last 5 minutes.
