Thoughtful Thursday - Lobster Spaghetti
¼ cup olive oil
½ cup onion, finely chopped
½ cup green bell pepper, finely chopped
1 teaspoon garlic, minced
1 28-ounce can tomatoes, pureed
1 cup white wine ½ teaspoon dried thyme
1 bay leaf
2 cups cooked lobster meat, chopped
½ teaspoon Old Bay Seafood Seasoning sea salt, to taste pepper, to taste
½ pound cooked spaghetti noodles
½ cup parmesan cheese, grated
- In a large skillet, heat olive oil on medium-high heat. Sauté onion, bell pepper & garlic for 5 minutes. Add tomatoes & wine to skillet. Stir & simmer for 5 minutes.
- Season mixture with thyme & bay leaf, then simmer for 5 more minutes. Add lobster, Old Bay, salt & pepper. Simmer mixture on low for 12 minutes. Remove bay leaf & discard.
- Combine lobster mixture with hot spaghetti noodles. Serve on a large platter & sprinkle parmesan cheese on top. servings: 4 / prep time: 15 minutes / cook time: 30 minutes
