Romantic Monday SWEET POTATO PIE
1 9-inch, pie shell
4 large sweet potatoes 1/3 cup butter
1 cup brown sugar
2 eggs, beaten
1/4 cup evaporated milk 1 teaspoon vanilla
1 teaspoon allspice
Preheat oven to 325 degrees. Poke holes in the pie shell with a fork & bake for 5-7 minutes.
Peel then cut sweet potatoes into large pieces. Boil them in a large pot of water for 15-20 minutes. Drain then place them in a medium bowl. With an electric mixer, beat potatoes until smooth. Stir in butter, brown sugar, beaten eggs, evaporated milk, vanilla & allspice.
Pour mixture into pie shell & bake for 1 hour. Let cool before cutting.
