1½ pounds beef skirt steak 
¼ cup fresh lime juice 
3 tablespoons molasses 
2 tablespoons olive oil 
1 small hot chili pepper, minced 
¼ cup cilantro, chopped 
1 tablespoon fresh garlic, minced 
1 teaspoon ground cumin 
½ teaspoon salt 
½ teaspoon pepper 
1 large onion, thinly sliced 
1 large bell pepper, thinly sliced 
12 flour tortillas (7-inch), warmed 
1. Cut steak crosswise into four pieces. In a medium bowl combine lime juice, molasses, olive 
oil, chili pepper, cilantro, garlic, cumin, salt & pepper. Place steak & mixture into a glass 
pan or plastic bag. Marinate steak for 2 hours or overnight in the refrigerator. 

2. Prepare grill to medium-high heat. Arrange steak on the grill close to the heat. Grill onions 
& bell peppers for 1 minute (place on foil if necessary). Grill steak until lightly charred for 
3-4 minutes on each side. 

3. Place steak on a cutting board & let stand for 2-3 minutes. Slice diagonally across the grain 
into 1/4-inch thick slices. Serve with flour tortillas, onions & bell peppers. Also great with: 
cheese, guacamole, salsa & sour cream.
