Quality Time Tuesday ROSEMARY & LEMON ROASTED CHICKEN

8 chicken thighs2 tablespoons fresh lemon juice2 tablespoons butter or margarine, softened4 tablespoons honey2 tablespoons fresh rosemary leaves, chopped1 teaspoon garlic powdersea salt, to tastepepper, to taste  1. Preheat oven to 400 degrees. Line a large baking pan with foil & place a roasting rack on top. Coat rack with non-stick spray. Place chicken pieces, skin side up on top of rack (this allows chicken to roast & not stew in its own juices).  2. Squeeze lemon juice over chicken. Rub butter then drizzle honey over the top of each piece. Season with rosemary, garlic powder, salt & pepper. 3. Roast chicken for 15 minutes then reduce heat to 350 degrees for 20 more minutes.servings: 4 / prep time: 10 minutes / cook time: 35 minutes
