Quality Time Tuesday PEPPER JACK MASHED POTATOES
4 Idaho or Russet potatoes
1/2 cup butter, divided
2/3 cup milk, warm
1 cup pepper jack cheese, shredded
sea salt, to taste
white pepper, to taste
Fill a large pot half way with water & bring it to a boil. Peel then cut potatoes into large pieces. Place potatoes in pot, bring to a boil then cook for 15-20 minutes, until soft.
When the potatoes are done, drain them in a colander. Pour potatoes into a large bowl & beat them with an electric mixer. Gradually beat in 1/3 cup of butter & warm milk. Blend in cheese then season with salt & pepper. Place remaining butter on top to melt.
