Quality Time Tuesday GARLIC ROASTED CRAB
4 Dungeness crabs, cooked
1 cup butter
1 cup olive oil
¼ cup fresh lemon juice
3 tablespoons fresh garlic, chopped
½ cup onion, finely chopped
½ cup fresh cilantro, chopped
1 teaspoon fresh thyme leaves, chopped
1 teaspoon fresh rosemary leaves, chopped
2 tablespoons chicken bouillon
½ teaspoon cayenne pepper
1. Preheat oven to 375 degrees. Thoroughly clean cooked crabs, discard top shell & gills.
Rinse crabs with water & break legs apart from body. Place crabs flat on a baking pan.
2. In a medium saucepan add butter, oil & lemon juice. In a food processor or blender, add
garlic, onion, cilantro, thyme & rosemary. Blend mixture for 10 seconds. Add seasoning
mixture to saucepan & sauté for 3-5 minutes. Add bouillon & pepper.
3. Pour mixture over crabs & bake for 30-35 minutes. Frequently stir & spoon sauce over
crabs throughout cooking time.
