Quality Time Tuesday DEVILED EGGS STUFFED WITH CRABMEAT
2 tablespoons mayonnaise
1 tablespoon sweet & hot mustard
2 tablespoons pickle relish
4 tablespoons fresh or canned crabmeat
sea salt, to taste
cayanne pepper, to taste
1. In a medium saucepan, bring water to a boil then boil eggs for 15 minutes. While eggs are still warm, peel & cut them lengthwise in half. Place yolks in a medium mixing bowl & place egg white on a platter
2. Mash all of the egg yolks with a fork. Mix mayonnaise, mustard & relish into yolks. Gently fold crabmeat into the mixture then add salt & cayanne pepper to taste.
3. With a teaspoon, fill each egg white with the egg yolk mixture. Each egg should be filled with a heaping spoonful. Lightly sprinkle paprika on top of each egg to garnish.
