Quality Time Tuesday COUNTRY FRIED CORN
8 ears fresh sweet corn
4 strips bacon, optional
2 tablespoons flour
2 tablespoons sugar
1 cup water 1⁄4 cup butter
sea salt, to taste white pepper, to taste
With a sharp knife, slice kernels off cob then place in a large bowl.
In a large skillet fry bacon. Set bacon aside and save pan drippings in the skillet.
Add corn to the hot skillet with bacon drippings (or use 4 tablespoons olive oil). Add flour, sugar & water then bring to a simmer. Cover & simmer on low for 10 minutes. When corn is done add butter, sea salt & white pepper to taste. Crush & sprinkle bacon pieces on top before serving.
